Bake the bacon briefly in a hot pan. Remove them into a plate and set it aside.
In a bowl, beat the eggs with a pinch of salt and black pepper, add the finely chopped chicken fillet and the pre-grated yellow cheese.
The mixture is stirred and fried in the fat, which was released by the bacon.
The slices of bread are spread with a thin layer of butter. Spread the scrambled eggs on two slices and place strips of bacon on top of them.
Cover the slices with the other two and toast in a sandwich toaster. Once they are ready, open them up and garnish them with fresh arugula.
