How to make
Trim the turkey breast and cut it into bite sized chunks.
Sear them in olive on high heat, until they turn white on the outside but remain uncooked on the inside. Set aside and season with black pepper.
In the same pan add a chunk of butter and once it melts add the onion and plums cut into thin stripes, along with the sugar and two pinches of salt. Reduce the heat and simmer, until all the ingredients are cooked.
You will get a thick sauce from the juices released by the plums and onion, while the sugar and butter will start to caramelise.
Stir constantly since this sauce tends to burn quite easily, and when the sauce is reduced pour the wine and a little water.
Cook for 3-4 additional minutes and blend to a desired texture.
Since the sauce is pretty thick, add a little more water, the lime juice and the semi cooked turkey bites.
Simmer for around 15 minutes or until the sauce obtains the desired consistency, and of course the meat is cooked.
Season with salt to achieve a nice contrast between sweet, sour, and savory.
Serve warm.
