"A slightly forgotten but very tasty old country-style vegetable casserole"

Ingredients

  • onions - 4 heads
  • butter - 1/2 cup
  • peppers - 17.5 oz (500 g), sivri
  • tomatoes - 2 - 3, ripe
  • salt
  • feta cheese - 1 cup, crumbled
  • yoghurt - 2 cups (500 g)
  • flour - 2 tablespoons
  • eggs - 4 - 5
  • parsley - 1/2 bunch

How to make

Heat the butter and fry the sliced onions. Once softened, add the cleaned and sliced sivri peppers and let them braise as well. Then add the cleaned and sliced tomatoes.

Fry with them, add salt and transfer the mixture into a baking dish. Sprinkle the top with crumbled feta cheese. Beat the eggs with the yoghurt, chopped parsley and flour and pour it over the dish.

Put the stew to bake in a warm oven until it gets a nice tan.
