How to make
Wash the quinoa under running water in a strainer. Boil it for about 10 minutes. Strain it if there is any water left over from the boiling and set it aside.
Grate the zucchini on a coarse side of a grater. Use a young, tender zucchini and do not peel it.
Wash the broccoli well, cut the thick hard stump and divide the head of broccoli into smaller pieces.
Heat two or three tablespoons of olive oil over medium heat and add the grated zucchini in it to stew. Add the broccoli pieces, season with salt and add the pieces of butter. Let it melt gradually and let the vegetables absorb it.
If necessary, add more oil or sprinkle with olive oil. Do not add other flavors, so that the dish stays fresh and light in taste.
When the zucchini soften, but not too much and the broccoli is still crunchy, remove them from the heat and cover the pan with a lid for 5-6 minutes and let them steam. The broccoli should remain crunchy, since they are more pleasant, tasty and healthy that way.
Add the quinoa to the vegetables. Mix the quinoa with the broccoli and zucchini and serve.
