How to make
Sift the flour and mix it with the sugar, yeast, warm milk, soft butter and salt. Knead your dough well, until all the ingredients are nicely incorporated. Let it rest in a warm place for an hour.
Prepare the cream by combining the egg yolks with the corn starch and a little milk. Bring the rest of the milk to a boil and add slowly the egg yolk mix, sugar and vanilla to it, while stirring constantly. Bring to a boil again, let it thicken for 2 minutes and set aside.
Roll out the dough and cut it into circles with the rim of a glass. Fill with the cooled cream sprinkle with chocolate chips and seal the brioche.
Brush with the whisked egg yolk and let it rise for 40 minues. Bake for 45 minutes at 320°F (160 degrees). Cool and serve.
