"Special bites for friends who have excluded animal products from their menu"

Ingredients

  • whole grain rice crackers - 3.5 oz (100 g)
  • avocado - 1 pc.
  • garlic - 1 clove
  • freshly squeezed lemon juice - 2 tablespoons
  • olive oil - 1 tbsp.
  • salt
  • black pepper - by taste
  • cherry tomatoes - 3.5 oz (100 g)
  • olives - 3.5 oz (100 g)
  • cucumber - 1/2 pc.
  • basil leaves - for garnish

How to make

Cut the avocado into halves, remove its seed and remove edible part from the skin with a spoon.

Pour in the freshly squeezed lemon juice, olive oil, add the crushed garlic clove over it and mix with a fork until a smooth mixture forms and season with salt and black pepper.

Spread the whole grain rice crackers with the avocado paste, top off with a slice of cucumber, cherry tomato, pitted olive and fresh basil leaves.
