How to make
The washed tomatoes are grated on a large grater in a large bowl. Peel the carrot and cut it into small cubes. Peel the peppers and cut them into strips. Cut the onion into crescents.
Heat oil in a saucepan, fry the onions and peppers with a pinch of salt.
Pour the grated tomatoes, carrots and simmer for 1 hour. Season with salt, sugar, chopped herbs and put in a sprig of dried savory.
Allow the mixture to boil a little more, until it reaches the required density, stirring with a wooden spatula, then remove from the heat and discard the sprig.
Pour into dry jars, close with a lid. Boil the jars for 5 minutes and then turn the lids down to cool.
This sauce is great for spaghetti, pizza, fried peppers, zucchini, and eggplant - a versatile and delicious tomato sauce.
