How to make
In a bowl, mix the cut and cleaned dates and finely cut candied ginger, and pour the boiling water over them. Leave aside to cool down for 10 minutes.
Preheat the oven to 360°F (180 °C) and grease a form or a baking dish. Beat the butter and sugar until you get a fluffy and smooth cream. Then add the egg and beat well once again.
In a separate bowl, combine the flour, baking powder and powdered ginger. Mix the vanilla and baking soda in with the dates with the water and the candied ginger.
Add the flour mix to the butter one in batches while continuously beating and finally, mix well with the flavored water and dates and ginger that have been soaked in it.
Pour the mixture into a prepared oven dish and bake for half an hour or until the toothpick comes out dry. On top, make custom decorations on the cooled cake. It goes well with caramelized bananas and whipped cream.
