  • milk - 3/4 cup
  • sparkling water - 3/4 cup
  • fresh spinach - 7 oz (200 g)
  • salt - 1 tbsp.
  • sugar - 1 tbsp.
  • oil - 2 tbsp.
  • for the stuffing
  • prosciutto - 5.2 oz (150 g)
  • cream cheese - 1.7 oz (50 g)
  • blue cheese - 1.7 oz (50 g)
  • cow cheese - 1.7 oz (50 g)
  • yellow cheese - 1.7 oz (50 g)
  • brie cheese - 1.7 oz (50 g)
  • cheddar cheese - 1.7 oz (50 g)

How to make

First of all, you need to mix the spinach pancake batter. First, beat the eggs with the salt and sugar.

Add cold milk, oil and sparkling water in the mixture.

Add the flour in small portions to obtain a mixture, thick like a baileys drink.

Finally, chop the fresh spinach in bigger pieces, which is cleaned and washed and stir with a spoon.

Use a pancake pan, which is heated on a hot stove. Grease it with oil and pour 2 ladles of the mixture so that you can get a thicker pancake than usual.

Once you have prepared the spinach pancakes, spread cream cheese on each one. Put a thin piece of prosciutto and finally, grate the cow's cheese, cheddar cheese, blue cheese, brie cheese and yellow cheese.

The cheeses are according to your preferences, do not go overboard with it so that the spinach pancake can be rolled up. If you want the cheeses to melt, place them while the pancake is still warm in the pan.

Give them a minute to melt and then roll them up.
