Soak the beans for 1 night and boil the next day in salted water. Parboil the spinach and cut the chicken into small pieces. Season with salt and black pepper to taste.
Fry the meat with the onions in a deep pan, add the tomato puree, chopped peppers, beans and 2 cups of water. When it comes to a boil, reduce the heat and let the dish simmer for about an hour.
Pour a little of the sauce in a cup. In the pan, add breadcrumbs, cheese, spinach, butter and salt to taste. Break the eggs and stir continuously. Pour the tajine into a greased tray and bake until the liquid evaporates.
