How to make
Wash the eggplants and peppers, clean, bake and once cooled, peel them. Wash the tomatoes, parboil them in boiling water, cool and peel them as well.
Then finely chop the peppers, eggplants and tomatoes and along with the peeled garlic cloves, beat them with a mixer or in a wooden mortar and pestle.
To the resulting puree, add the oil and vinegar while continuously whipping.
