How to make
Choose carrots with bright orange color and wash them. Gently scrape and re-wash them, cut them into slices with a thickness from 15 to 19 mm. They are cooked until tender, then cooled.
From the cooked carrots, different beautiful shapes are cut. Prepare syrup from 4 1/5 cups (1 kg) sugar and 1 1/5 cups (300 ml) water. Carrots are soaked with boiling syrup and left to boil for 5 minutes and remove them from the heat.
Leave for 8 to 10 hours and after, boil again by adding the remaining sugar and boil until the carrots become transparent and the syrup thickens. Then, the citric acid is added.
