If you are vegetarian or just want to try soy mince or patties, keep in mind that soy is very healthy and contains many beneficial substances that are also found in meat.
You can use ready-made soy mince or you can make it yourself. A serving of fifteen medium-sized meatballs requires a cup and a half of soy, 3 thin slices of white bread, 1 teacup of milk, 1 onion, half a bunch of parsley, black pepper, salt, paprika, spices according to taste, breadcrumbs, oil.
Soak the soybeans overnight in cold water. In the morning, wash the soybeans and boil them for an hour and a half on low heat and then add salt to them. Cool the soybeans and grind them, until they resemble mince.
Finely chop the onion and fry it. Soak the slices of bread (no crusts) in milk. Add the onions, bread with milk, finely chopped parsley, salt, paprika and black pepper to the soy mince.
Everything is mixed and patties are formed. Each is rolled in breadcrumbs and fried, until it aquires a golden color in heated oil. You can bake the patties in the oven, by greasing the baking pan and drizzling a few drops of oil on each patty.
The patties are baked for forty minutes at 200°C, by turning them to the other side after twenty minutes of baking.
You can prepare soy patties with vegetables. And for this recipe, you can use both ready-made soy mince and homemade soy mince.
You need 250 grams of soy mince, 1 large potato, 1 carrot, 3 tablespoons of flour, parsley, salt, black pepper, spices according to taste and half a glass of milk.
The carrot and potato are peeled and grated, they are mixed with milk and if necessary, a little flour is added for thickening.
Shape the patties, sprinkle them with flour or if desired, with breadcrumbs and fry them on each side, until they aquire a golden color.
