Tutmanik is a traditional and much loved Bulgarian dish. It is a kneaded bread, in which there is white cheese.

There are many other tutmanik recipes, such as tutmanik with minced meat, sweet tutmanik, but the traditional tutmanik is with white cheese, it's easy and quick to make and also very tasty.

It is suitable for breakfast, as well as for lunch and dinner.

For the traditional tutmanik with white cheese you need 500 g of flour, 3 eggs, 1 yolk, 250 g of white cheese, 1 cup of yogurt, 120 g of butter, 1/2 cup of oil, 25 g live yeast, 50 ml of water, 1 tsp. of sugar and 1 tsp. of salt.

First, you need to activate the yeast in lukewarm water with sugar and 1 tsp. of flour. Leave it to activate.

Separately, in a deep bowl sift the flour along with the salt and make a well. Pour the yeast, yogurt and 1 egg into it.

Knead a soft dough, divide it into 3 parts and leave it to rise for about 1 hour.

In another bowl, beat the eggs, crumble the cheese in them and stir.

Melt the butter and mix it with the oil.

Roll out the 3 pieces of dough into a thick crust. Grease the first one with plenty of fat and sprinkle the mixture of eggs and white cheese on it.

Put the second crust on top of the first one and spread it with the fat and the mixture of eggs and white cheese again.

Put the third crust on top and roll it up into a roll. Divide into 8 equal parts and place them in a greased baking pan, with a small space between them.

Cover them with a towel and leave the tutmanik to rise, until it doubles in volume.

Spread them with a beaten yolk with a little water and bake them in a preheated oven at 200 degrees until the tutmanik acquires a golden color.

Your traditional tutmanik with white cheese is ready.
