How to make
Preheat the oven to 340°F (170 °C). Use a round, buttered 9″ (23 cm) diameter form.
In a bowl mix the flour, sugar, salt and baking powder. Stir with a whisk. Add the eggs, olive oil and milk. Stir until the ingredients are very well mixed into a smooth dough.
Pour the mixture into the form, hit it about 3 times on the counter to get rid of the air.
Clean the apples and dice them to medium-sized cubes. Sprinkle them over the dough randomly. Sprinkle lightly with cinnamon. Bake at 340°F (170 °C) about 30 min.
In the meantime, prepare the glaze from the sugar, lemon zest, egg and stir with a whisk. Add the melted butter, stir again to mix all the ingredients with the butter well.
After baking for the 30 min., take the cake out of the oven and pour the glaze over it. Return it to the oven to bake another 12 min.
Once the time has elapsed, take it out, slide a knife along the edges of the form and invert it onto a cooking grid, then into a suitable plate.

Notes: A straightforward recipe that yields remarkable results. It's a buttery cake with a crumby structure, while moist and very aromatic at the same time. Serve in cake plates with a ball of whipped cream on top and a slice of lemon.
