  • tomatoes - 22 lb (10 kg), peeled, seedless
  • garlic - 3 heads
  • onions - 6 heads
  • sugar - 1 1/5 cups (300 g)
  • salt - 1/3 cup (80 g)
  • black pepper - 1 tbsp, ground
  • cumin - 1 tbsp, ground
  • savory - 1 tbsp, ground
  • cinnamon - 1 stick
  • cloves - 15 buds, ground
  • nutmeg - 1 packet, ground
  • vinegar - 2 tbsp
  • citric acid - 1 tbsp
  • baking powder - 1

How to make

Chop the washed tomatoes into coarse pieces and pass them through a milling machine to remove the skins and seeds (twice if necessary for a smooth homogeneous mixture).

Mash together the peeled onions and garlic, as well as the spices (excluding the cinnamon stick).
