"An irresistible German cheesecake with lots of cream, biscuits, homemade jam or seasonal fruits."

Ingredients

  • cottage cheese - 2 1/2 cups (600 g)
  • sour cream - 4/5 cup (200 g)
  • sugar - 1 cup (250 g)
  • butter - 1 packet
  • eggs - 4
  • vanilla - 1
  • corn starch - 6 tbsp
  • baking powder - 1 tsp
  • lemon juice - of 1/2 lemon
  • for the layer
  • biscuits - 7 oz (200 g), tea
  • butter - 3 1/3 tbsp (50 g)

How to make

Crumble the biscuits finely and mix them with the butter, melted ahead of time.

Stir until you get crumbs and spread out the mixture in a suitable round form. Stir together the sour cream and cottage cheese.

Separately, beat the eggs with the sugar. To them, add the starch, cottage cheese mixture, melted butter, baking powder, lemon juice and vanilla. Beat with a mixer and pour it over the layer.

Bake in a preheated 350°F (175 °C) oven for about 1 hour or until you see it start to brown around the edges, while still being light in the middle. Keep in mind that the cake will swell quite a lot during baking but then shrink after it cools.

Turn the oven off and leave the door slightly open. After 10 min. or so, take the cake out and leave it to cool. Decorate with fruits of your choice or jam.
