Ingredients

  • dark chocolate - 9.5 oz (275 g)
  • butter - 1/2 cup (125 g)
  • sugar - 1/2 cup (125 g)
  • vanilla - 1 tsp, natural, or vanilla sugar
  • eggs - 4
  • starch - 1/5 cup (60 g)
  • flour - 1/5 cup (60 g)
  • cocoa - 1 tbsp
  • baking powder - 1 tsp
  • oil - for the form
  • jam - 5.5 oz (150 g) apricot
  • cream - 1/3 cup (75 ml)

How to make

Chop 4.5 oz (125 g) of the chocolate into pieces and melt it in a water bath. Leave it to cool. Heat the oven to 350°F (175 °C).

Beat the soft butter with the sugar and vanilla until whitened, add the eggs 1 by 1. Add the chocolate. Combine the flour, starch, cocoa and baking powder and beat for about 2 min. with the chocolate mixture with a mixer on the highest setting.

Distribute the dough into a buttered cake form and bake in the middle of the oven for about 25-30 min. Take it out of the oven, leave it to cool and then remove from the form.

Using a round form, 2″ (5 cm) in diameter, cut out 27 circles from the cake layer. Smear them with jam and stick them together in 3s. Smear the sides of the cakes as well.

Glaze: Cut the rest of the dark chocolate finely, melt it in a water bath and leave it to cool.

Pour the chocolate glaze over the cakes. Beat the cream and spray on a letter S onto each cake.
