Ingredients

  • chicken - 1 whole
  • rabbit - 1 whole
  • rice - 3 cups
  • green beans - 4/5 cup (180 g) pods + 1/2 cup (120 g) beans
  • tomatoes - 2, finely chopped
  • olive oil - 4 tbsp
  • chicken broth - 8 1/3 cups (2 L)
  • saffron - 1/2 tsp
  • paprika - 1 tsp
  • lemons - 1

How to make

Heat the olive oil in a paella pan. Salt the rabbit and chicken (cut into pieces) and put them to braise until golden. Add the green beans and pods and saute them with the meat for a few min. Next, add the paprika and broth and stir well.

Cook for about 20 min., then add the rice and stir so that the broth covers it. Let it boil for another 20 min. without stirring, for the rice to absorb the broth.

Remove from the stove, cover with a lid and leave it for about 15 min.

Serve hot, decorated with lemon slices.
