Boil a sugar syrup from the sugar and water. Boil until the sugar is completely dissolved and syrup is slightly reduced. You can use brown sugar instead of white. For the Latte Macchiato you will only need a small part of the syrup; you can store the rest in a jar in the fridge for 1 month.
Using the steam wand on the coffee maker, heat the milk in a suitable container, keeping the wand submerged below the surface of the resulting foam. Heat until the walls of the container are well heated and a smooth and thick foam forms on top.
Make the espresso. Transfer the milk to a tall glass, while supporting the foam with a spoon. Once only foam remains in the container, carefully distribute it over the milk using a spoon. Pour on the espresso carefully on top and finish off with a little sugar syrup to taste.
You can sprinkle the drink with powdered cocoa, cinnamon or grated chocolate.
