How to make
Cut the onion into thin crescents and fry it with a pinch of salt until soft in the olive oil and butter. Pour one spoonful of sugar and stir until you get a light caramel color is obtained. Leave it to cool.
Sift the flour into a bowl and make a well in which you pour half of the water - slightly warmed. Crush the yeast into it and dissolve along with the sugar. Wait 8-10 minutes for it to activate.
Pour the remaining slightly warmed water, the onion fat and the cream cheese into the well.
Knead a soft dough, to which you add a little flour so that it does not stick to you. In the process of kneading, add the onion and salt. Once you have an elastic and smooth ball of dough, place it in a baking pan - 22-24 cm diameter, covered with baking paper. Make a cross-shaped cut in the center and sprinkle with flour.
Place the baking pan in the oven heated to 140°F (60°C) with a fireproof container with water inside (a small bowl is enough). Leave it like this for 25-30 minutes, then increase the heat to 390°F (200°C) without opening it and bake until a dark golden crust is obtained - about 25-30 minutes.
Leave the baked bread to cool on a wire rack and then break it up at your table.
