Mix the flour with 1 egg, the butter and add the pinch of salt. At the beginning, the dough turns to crumbs. Continue to knead until homogenous and let it rest for a half hour in the refrigerator, covered with a towel.
Then roll it out into an oval and transfer it into a greased and floured tray; it needs to cover the walls of the tray as well. Press down on it, pierce it gently with a fork and put it to bake for 10-odd minutes in preheated oven.
Meanwhile, chop the bacon, put it to fry with a little oil and add the finely chopped spinach. Allow it to soften and remove it from the heat. Beat the other 3 eggs with the milk and cream. Add salt and black pepper.
Put the bacon and spinach inside and pour the mixture over the baked layer. Put it to bake in a moderate oven for 30-40 minutes. Remove, sprinkle it with a little chopped bacon and grated cheese and return it to the oven to brown.
