How to make
Whisk the eggs, add salt to taste and while stirring, add 3 tablespoons cool water. Leave the eggs for 30 minutes as is. Put the noodles in 8 1/3 cups (2 liters) of boiling water for 15 minutes. Separately, warm up half the oil in a deep frying pan and fry the finely chopped onion and garlic until golden.
Add the meat, cut into cubes. Make a mixture of the chopped chilies, parsley, mushrooms and fried onions and garlic. Add this to the meat and saute on medium heat for 30 minutes.
Add salt to taste and sprinkle it with black pepper. Put the drained noodles in and stir gently. In the remaining oil, fry the beaten eggs into an omelette and cut it into strips.
Serve in deep plates. Put strips of the omelette on top, arranged in a form of some sort. Sprinkle it with lemon juice.
