Ingredients

  • brown rice - 9 oz (250 g)
  • water - 2 cups (500 ml)
  • himalayan salt - 2 pinches
  • pork - 1.1 lb (500 g)
  • leeks - 2 sprigs /white part/
  • field mushrooms - 12 oz (350 g)
  • paprika - 1 tbsp.
  • nutmeg - 1 pinch
  • olive oil - 4 tbsp.
  • black pepper

How to make

Wash the rice well and put it in a suitable pot.

Pour the water over it, add 2 tbsp. olive oil and put it to boil until fully cooked.

At the end of cooking /the rice should soften/, season with Himalayan salt and a pinch of nutmeg.

Clean the leeks and mushrooms and cut them into suitable pieces.

Put them in a baking tray and add the pork pieces. Season with salt, black pepper and paprika.

Drizzle with olive oil and cook until golden brown, by stirring occasionally.

Serve the brown rice, garnished with roasted pork chunks, leeks and mushrooms.

Garnish with chives.
