Huevos Rotos - the Spanish have come up with an ingenious way of serving fried potatoes with eggs, the yolk of which is runny.
When serving, the eggs are broken up with a fork and the creamy yolk is runny and it is absorbed into the fries. So simple, yet so delicious!
Often the dish is served in combination with jamon or chorizo. I present to you the recipe for Huevos Rotos.
Peel, wash and cut the potatoes into sticks. Dry them well, fry until golden in olive oil and season them with salt. It is best to leave them on kitchen paper to drain the fat.
In another pan, pour some of the fat in which the potatoes were fried and heat it over a moderate heat. Crack the eggs and cook them so that the whites are cooked and the yolks remain creamy and runny.
Transfer the eggs on the potatoes and break them up with a fork.
Serve the fries with eggs while they are warm.
