Panini with caramelized onions and cheddar
Cut the bread in half lengthwise and spread it thinly with 1 tbsp. of butter on the cut side. Spread the mustard on top.
Melt the other 2 tbsp. of butter in a heatproof pot on the stove. Cut the onion into thin crescents. Pour the onion into the butter and sugar. Mix well. Cook on very low heat (lowest possible on your stove) for about 30 minutes, until the onions are caramelized. Stir periodically.
Arrange half of the grated cheddar, mozzarella, caramelized onions and the remaining cheddar on the bread. Bake the sandwich in a press or on a greased pan on the stove, by pressing with something to flatten it. Bake for 3-5 minutes, until the cheese melts and the sandwich aquires an appetizing color.
Panini with chorizo and chicken fillet
Cut the bread in half lengthwise and spread a thin layer of butter on both halves. Cut the chicken fillet and chorizo into very thin pieces.
Arrange chicken fillet, ketchup, chorizo and thinly sliced mozzarella on the bun. Cover with the other half of the bread and bake in a sandwich press or on a greased pan on the stove, by pressing it down with something heavy to flatten the sandwich. Bake for 3-5 minutes, until the cheese melts and the sandwich is browned.
The panini sandwiches are very delicious.
