"Double cream eclairs - guaranteed to be tastier than you expected them to be"

Ingredients

  • milk - 1/2 cup (125 ml)
  • water - 1/2 cup (125 ml)
  • sugar - 1 tsp.
  • butter - 4.4 oz (125 g)
  • salt - 1 pinch
  • flour - 5 oz (140 g)
  • eggs - 4 pcs. large
  • for the cream
  • cream - 4/5 cup (200 ml)
  • powdered sugar - 2 tbsp.
  • vanilla - 1 pc. (0.2 g)
  • for the dairy cream
  • milk - 1 2/3 cups (400 ml)
  • pudding - 1 pc. Dr. Oetker vanilla (80 g)

How to make

Mix the milk, water and butter. Leave them on the stove to boil with the sugar and a pinch of salt.

Pour the flour and stir, until it starts to separate from the sides of the pot. Leave it to cool slightly.

Add the eggs, one at a time, by mixing after each one. Fill a piping bag and pipe out the eclairs onto a tray lined with baking paper.

Bake at 390°F (200°C) for 20-25 minutes. Do not open the oven while they are baking.

Finally, switch it off and open the door slightly. Leave them in for a few minutes. Remove them from the oven and leave them to cool.

Beat the cream with the powdered sugar and vanilla.

Prepare the cream according to the instructions on the package of Dr. Oetker vanilla pudding. Cut off the tops of the eclairs.

Fill them with the dairy cream first, then the other cream and put the tops back on.

If desired, you can decorate them with melted chocolate.
