How to make
Grease 12 muffin molds, which are made of firmer material or silicone, with butter. You can also use ordinary paper ones, but with them there is a risk that the savory pies will stick more stubbornly, which is not fatal in any case. Arrange paper muffin cups in the muffin molds.
Chop the onion and carrot and stew them for 4 minutes in olive oil. On the adjacent stove, blanch the broccoli pieces in boiling water for 5 minutes, then strain them well.
When the onion and carrot have softened, add the diced bacon. Fry everything for 3-4 minutes and remove them from the heat to cool slightly.
During this time, turn on the oven to heat up to 360°F (180°C).
Beat the eggs with a pinch of salt and black pepper. Add the cream to them and mix. If desired, you can also add about 1.8 oz (50 g) of grated yellow cheese.
Pour this mixture over the vegetables and bacon and mix well.
Place one broccoli pieces in each muffin mold and pour the prepared mixture on top, without filling the molds all the way to the top.
If you have some of the mixture left, use more molds and pour it into them. I got about 16 pcs., but I guess that's because they're a smaller than the standard size.
Bake the mini pies in the preheated oven for 20-25 minutes.
Serve them hot or cold to eat anytime. The mini broccoli pies in muffin molds are great for a picnic or as a snack for work.
