How to make
Put the water and butter in the saucepan.
Wait for the mixture boil and add the flour and baking powder.
Stir, until a smooth mixture is obtained.
Remove it and leave it to cool.
Add the eggs one by one, until they are completely absorbed. Leave the steamed dough to cool completely.
Grate the zucchini, onion and carrot. Strain them well and add them to the steamed dough. Stir well.
Using a spoon, form the small savory eclairs in a tray lined with baking paper at a distance.
Bake the savory zucchini eclairs in a non preheated oven at 360°F (180°C), until they're done.
