"The sponge cake with pears and coconut surprised us very pleasantly - try it for yourself"

Ingredients

  • flour - 5 oz (140 g)
  • coconut shavings - 3.5 oz (100 g) fine
  • baking powder - 1 tbsp (15 g)
  • pears - 1 pc. (soft, well ripened)
  • cream cheese - 3.9 oz (110 g) Philadelphia
  • oil - 2/5 cup (100 ml)
  • sugar - 3.5 oz (100 g)
  • eggs - 4 pcs. M or 3 pcs. XL
  • salt - 1 pinch
  • dulce de leche - 2 - 3 tbsp. (for spreading)

How to make

Beat the eggs along with the sugar, until a fluffy cream is obtained. Add the oil and cream cheese to them and beat again. There is no problem if small lumps from the white cheese remain.

Sift the flour along with the baking powder and mix it with the salt and coconut.

Pour the dry mixture into the liquid one and stir with a spatula.

Peel and cut the pear into small pieces.

Pour the sponge cake mixture into a suitable mold, which has been greased and floured and place the pear pieces on top.

Bake in a preheated oven at 360°F (180°C) for 30 minutes or until it is fully baked.

Remove the sponge cake from the mold and leave it to cool on a wire rack, then pour the slightly heated dulce de leche over it and sprinkle it generously with the remaining coconut.
