  • water - 3 1/3 tbsp (50 ml)
  • vanilla - 1 tsp.
  • almond flour - 5 oz (140 g)
  • sweetener - 3.9 oz (110 g) which is 1:1 with sugar
  • cocoa - 0.9 oz (25 g)
  • baking powder - 2 tsp (10 g)
  • For the glaze
  • cream - 6.8 fl oz (200 ml) liquid, unsweetened
  • cocoa - 1.4 oz (40 g)
  • sweetener - 2.1 oz (60 g) which is 1:1 with sugar
  • vanilla - 1 tsp.

How to make

Cake layer preparation:

Everything without the egg whites is poured into a bowl and is beaten with a mixer. Towards the end, beat the egg whites, until a white mixture is obtained and add them to the other mixture, which is then mixed by hand with a spatula.

Pour the mixture into a baking pan covered with baking paper.

Bake it in a preheated oven at 360°F (180°C) for about 25 minutes.

Keep an eye on it, I have a gas oven. Remove the cocoa layer from the oven and leave it to cool.

Glaze preparation:

Put everything in a saucepan and stir over low to medium heat, until it turns into a homogeneous mixture and thickens.

Transfer the glaze into a bowl, place it in a bowl of cold water and cool it, while stirring. It should be very slightly warm.

Pour the finished glaze over the chocolate cake.
