Ingredients

  • butter biscuits - 0.9 lb (400 g)
  • butter - 5.3 oz (150 g)
  • mascarpone - 1.1 lb (500 g)
  • sour cream - 0.9 lb (400 g)
  • strawberry jam - 0.9 oz (250 g)
  • powdered sugar - 10 tbsp.
  • fresh strawberries - 7 oz (200 g)
  • gelatin - 1 tbsp (10 g)
  • vanilla - 1 ampoule (liquid)
  • lemon juice - 4 - 5 drops

How to make

The biscuits are finely crushed.

Melt the butter in a water bath and add it to the biscuits.

The mixture is poured into a baking pan covered with parchment paper.

Mix everything well and with the help of a spoon press down the mixture to form a base.

Using a mixer, beat the mascarpone and sour cream, until an airy mixture is obtained. Add the powdered sugar, vanilla and lemon juice and beat the mixture a little more.

Pour it over the biscuit base and level it out well. Pour the strawberry jam on top.

You can put it in the fridge.

Meanwhile, prepare the gelatin as indicated on the packet and cut the strawberries thinly.

Arrange them on the cheesecake as you wish and pour the gelatin mixture.

Leave it overnight in the refrigerator.

The cheesecake with mascarpone and strawberries is ready.
