How to make
Boil the milk with the sugar. Beat the egg yolks well with the flour and a little of the milk.
Add this mixture to the milk on the stove while stirring. Once thickened, remove from the heat and add the vanilla. Stir patiently until cool.
Then gently mix in the beaten to snow egg whites, and finally the beaten to snow cream. Fill the cream into an icing piping syringe with a thin nozzle and fill the éclairs.
