"Christmas is the `cakiest` time of the year, when we can afford to forget about our diets and indulge."

Ingredients

  • pistachios - 1/3 cup (75 g), shelled
  • almonds - 3 1/3 tbsp (50 g) sliced + 2/5 cup (100 g) ground
  • cocoa - 1 tsp (5 g) powdered
  • spices - 2 tsp, mix of cinnamon, ginger, cloves, coriander, cardamom and nutmeg
  • baking powder - 2 tsp
  • blueberries - 2/5 cup (100 g), dried
  • sour cherries - 2/5 cup (100 g), dried
  • raisins - 2/5 cup (100 g), golden
  • oranges - zest of 1 orange + 3 1/3 tbsp (50 ml) orange juice
  • coffee - 3 1/3 tbsp (50 ml) cold, black
  • molasses - 1/3 cup (75 g), or dark agave nectar
  • vanilla - 1 tsp, extract
  • pumpkins - 7 oz (200 g), raw, very finely grated
  • walnuts - 2/3 cup (150 g)
  • dried fruits - 1/2 cup (120 g), mix for the top
  • honey - 3 tablespoons
  • rum - 4 - 5 tablespoons

How to make

Turn on the oven to about 300°F (150 °C). Line a tray with a diameter of about 7″ (18 cm) with baking paper. In a bowl, mix the pistachios both types almonds, the raisins, blueberries, sour cherries, cocoa, baking powder, mix of cinnamon, ginger, cloves, coriander, cardamom and nutmeg and orange peel.

Mix them well and successively add the orange juice, coffee, vanilla, finely grated pumpkin and molasses or sweet agave nectar syrup.

Mix all the ingredients very well with a spoon. Put the mixture into the prepared tray and then even out the top. Put it to bake in the oven for about 1 ¼ - 1 ½ hours. Check for readiness with a wooden skewer at the 1 ¼ hour mark - poke it in the middle. If it comes out dry, the pie is ready. Crumble the walnuts into coarse chunks and mix them with a mix of dried fruits.

Mix the honey and rum until blended and the honey dissolves. Remove the baked Christmas pie, sprinkle it evenly with the mix of fruits and walnuts and pour on the honey and rum over it.

Return it to the hot oven for 10-odd minutes. Remove the pie and cool it well before removing it from the mold.
