"A different take on the classic casserole with potatoes and spinach with the surprising addition of cheddar!"

Ingredients

  • large potatoes - 8 pcs.
  • frozen spinach - 10.5 oz (300 g)
  • spring onions - 2 tbsp. (chopped)
  • cheddar - 1 cup
  • heavy cream - 1 cup
  • butter - 1/4 cup
  • black pepper

How to make

Peel and slice the potatoes. Preheat the oven to 390°F (200 degrees) and grease a baking pan.

Boil the potatoes, strain and mash them. In a deep bowl, mix the potatoes with the spinach, cream, butter, spring onions, black pepper and salt.

Transfer the mixture into the baking pan, bake it for 15 minutes. Sprinkle it with cheese and bake it for another 5 minutes.
