How to make
Boil the spaghetti as indicated on the package.
Peel an eggplant and cut it into small cubes. Soak it in cold water and rinse it very well.
Peel an onion and finely chop it. Heat the pan with the olive oil. Add the onion and stew it, then the eggplant, finely chopped pepper and finely chopped tomato.
Season with salt and basil and remove the vegetables from the heat.
Pour the strained spaghetti into a suitable dish and arrange the vegetables on top. Sprinkle with parmesan and garnish with basil.
