Ingredients

  • milk - 1 1/5 cups (300 ml)
  • water - 4/5 cup (200 ml)
  • yeast - 3 1/3 tbsp (50 g)
  • sugar - 2 tbsp
  • salt - 1 tbsp
  • flour - 2 lb (1 kg)
  • eggs - 4
  • yoghurt - 3 tbsp
  • oil - 3 tbsp
  • butter - 1/3 cup (75 g)
  • vinegar - 1 tbsp
  • sesame seeds - for sprinkling, optional

How to make

In the slightly warm milk, dissolve the yeast with the sugar and 2 tablespoons flour. Stir and leave them in a warm place to rise. In a large tray, sift the flour and in a well in the middle, break the eggs (set aside 1 yolk for smearing), add the salt, yoghurt, water, vinegar, oil. Gradually knead a soft dough and let it rise.

Divide it into 2 parts, one larger (2/3 of the dough) and one smaller (1/3). Divide the larger part into 5 equal sized balls. Roll out each ball into a sheet the size of the bottom of the tray, arrange them next to each other and coat them with melted butter. Arrange them directly in a greased tray.

Cut it into 8 equal slices like a pizza. Grab each piece by its thin side and turn it towards its thick outside to form the rays of the sun. In the middle, place the remaining 1/3 of the dough, formed into a ball. Leave the pita to rise in a warm place and then brush it with the egg yolk beaten with a little oil.

Sprinkle the top with plenty of sesame seeds and other nuts, as desired. Put the pita to bake in a preheated 390°F (200 °C) oven for about 35-40 minutes. 15-20 minutes later, reduce the oven to 370°F (190 °C).

Wrap the baked pita with a towel.
