How to make
Dissolve the yeast in the lukewarm milk with the sugar and 1 tablespoon flour. Once it activates, pour it in the well of sifted flour, to which you have already added the cold water with the egg and salt. Knead a smooth dough with a medium softness, hit it on the table 20-30 times and let it rise.
Leave to rest for 20-odd minutes. Divide the dough into equal balls - about 8 of them. Roll out each one and smear it with butter, sprinkle with feta cheese and shape into a ball again.
Arrange the balls next to each other in a greased tray and leave them to rise in a warm place, covered with a towel for about 1 hour. Top the buns with beaten egg, 1 tablespoon oil and sprinkle with plenty of sesame seeds.
Bake in a preheated oven at 390°F (200 °C).
