Knead smooth and firm dough from flour and a little salt water Boil the rice in salted water and drain.
Peel the potatoes, wash them and dry them. Grate them and mix them with rice, egg, crumbled cheese, butter, salt, mint and black pepper.
Roll sheets of dough. Put one on the bottom of a buttered baking dish, spread the filling on top and cover with the second crust.
Pinch the edges nicely and insert the pie to bake in moderate heated oven until golden.
