Separate the broccoli florets and a trim the stalks. Clean the cut stalks from their outer layer, then cut them up. Cut the larger florets lengthwise. Put everything in a steamer and steam for 10 minutes, so that they retain their color.
Once done, salt and sprinkle with grated feta cheese. For the sauce, mix the egg yolks with 2 tablespoons cool water. Add the butter and mix. Heat it until it's about the thickness of cream, but do not let it boil.
Flavor the sauce with lemon juice and salt to taste.
