Ingredients

  • eggs - 4 + yolks for smearing
  • sugar - 1 cup
  • butter - 1/5 cup (60 g)
  • margarine - 2/5 cup (100 g)
  • milk - 1 cup
  • lemons - candied rinds
  • vanilla - 1 packet
  • rum - 1 tbsp
  • yeast - 1 packet, dry
  • flour - 2/5 cup (100 g), self - rising + about 3 cups (700 g) (add more if needed)
  • sugar - for sprinkling

How to make

Beat the 4 eggs with the sugar with a mixer until it melts. Add the warm milk with the yeast, the melted butter and margarine and stir. Add the vanilla, rum and candied lemon rinds.

Add the flour in portions, while stirring. Once the mixture starts to thicken, begin to knead until you get a smooth dough. Leave the dough to rise in a warm area. Soak the raisins in a little rum.

Once the dough rises, roll it out into a thin layer. Cut out circles using a suitable form. Roll the raisins in flour and put 2-3 of them in each circle. Fold each circle in 2 and then in 2 again. Put 2-3 of these folded circles in each muffin cup.

Leave the cozonacs to rise again. Smear them with a beaten egg yolk and sprinkle with sugar. Bake them, while gradually increasing the oven temperature until they turn golden.
