How to make
Grate the zucchini on a coarse grater and cut the garlic into circles.
Fry the vegetables in a deep pan with olive oil and a pinch of salt, while stirring at all times.
Beat the eggs in a small bowl and add the sliced zucchini.
Pour half of the mixture into a non-stick pan.
Grate some yellow cheese in the middle.
When ready, fold the omelette with zucchini in half and leave it for another 1-2 minutes in the pan, until it aquires a pleasant color.
Do the same with the rest of the mixture.
Enjoy this wonderful zucchini omelette.
