Ingredients

  • salmon fillet - 7 oz (200 g)
  • hake fillet - 7 oz (200 g)
  • eggs - 1 pc. + 1 egg white (if necessary)
  • almond flour - 2 - 3 tbsp.
  • breadcrumbs - 1 tbsp.
  • dried vegetable powder - 1 tsp.
  • black pepper - by taste
  • salt - by taste
  • olive oil - for frying
  • lemons
  • green salad - fresh for serving

How to make

If you are using frozen fish, let it defrost well and strain the water. This is important so that the mixture does not become thin and watery for the bites.

Place the well-cleaned salmon and hake fillets in a meat grinder, blender, chopper or other suitable appliance. Grind the minced meat - in bulk or as finely as you like.

Add the almond flour, breadcrumbs, egg, dried vegetable powder, or even maybe a little extra garlic powder or spice to your liking. Knead the minced fish.

If the mixture is thick, add one egg white, otherwise thicken it with almond flour or breadcrumbs.

Heat olive oil in a non-stick pan over medium to high heat. Do not put too much, but enough to barely cover the bottom. Do not worry that olive oil becomes harmful when heated, because this is not true.

Form oblong fish bites and bake/fry them until they aquire a golden color on both sides.

Be careful when turning them - it should be done quickly, with a suitable kitchen spatula.

Serve the light fish bites with lemon slices and a fresh kale salad, flavored with olive oil and lemon juice.
