Healthy apple cake for lovers of apple desserts.
Beat the whole eggs or only egg whites with the brown sugar into a fluffy foam. To make it more sustainable and thick, beat the mixture in a water bath at 120°F (50 degrees) for 3 minutes.
In a blender, blend the peeled and cleaned apples (about 170 g) with the walnuts, dates and flaxseed.
To the eggs, add the coconut oil and shavings, ground almonds and spoon by spoon of the mixture from the blender. Stir until it has completely absorbed and finally add the vanilla and spelt flour mixed with baking powder. When stirring, try to keep the mixture fluffy. If it is too thin, add more flour or ground almonds.
Pour it into a baking pan covered with baking paper and put it in a preheated oven at 360°F (180 degrees) for 20-25 minutes or until it is fully baked.
The finished healthy apple cake, is left to cool and is then cut into pieces. If desired, sprinkle the fruit cake with a little powdered sugar or spread it with honey.
