Ingredients

  • mince - 2 lb (1 kg) mixture
  • eggs - 5
  • bread - 2 slices, dry
  • onions - 2 heads
  • milk - 1 cup
  • cream - 1 cup
  • baking powder - 1 tsp
  • flour - 2 tsp
  • black pepper
  • paprika
  • thyme - 1/2 tsp, dry
  • savory - 1 tsp
  • salt
  • cheese - for sprinkling

How to make

Sauté a little butter in a pan and fry the chopped onion. In a large bowl, mix the minced meat with 2 eggs, the soaked in water and drained slices of bread, thyme, savory and salt, black pepper and paprika to taste.

Knead the minced meat and add the fried onion. Spread it on a greased tray and put it to bake in a moderate oven until the minced meat changes color. Beat 3 eggs with fresh milk and cream, add the flour and baking powder, a little salt and black pepper to taste.

Pour this mixture over the slightly browned mince, return it to the oven to bake until it tightens and gains a slight tan. Remove and immediately sprinkle it with grated cheese.

Serve it immediately, or bake it some more for the cheese to crisp.
