How to make
Clean the wheat and wash it thoroughly with water. Let it soak for a few hours in cold water, then put it in a boiling pot and boil it in the same water over low heat. Separate about 1/3 from the wheat.
Rub the remaining wheat through a sieve.
Bring the resulting porridge to a boiling point again and then add the starch diluted with a little cold water, half the sugar and the wheat grains that you set aside.
Boil over low heat until it thickens. Finally, add the raisins and mix.
Pour into suitable glasses. Cool the ashure.
Garnish with a scoop of ice cream when serving.
