Ingredients

  • For the vanilla cream
  • milk - 3 1/4 cups (650 ml)
  • eggs - 3 pcs.
  • cornstarch - 2 tbsp. (natural)
  • vanilla - 1 pod
  • sugar - 4.2 oz (120 g)
  • For the tangerine sugar
  • sugar - 2.8 oz (80 g)
  • tangerine peel - from 1 tangerine (only the orange part)

How to make

Heat 2 1/2 cups (500 ml) of the milk with the sugar over a moderate heat. Once melted, grate the inside of the vanilla pod.

Beat the eggs and add the starch and the rest of the milk, until you a smooth and homogeneous mixture is obtained.

Pour the egg mixture into the hot flavored milk on the stove and stir vigorously on low heat for about 8 minutes or until the cream thickens.

Don't wait for it to thicken too much, because when it cools down it will set even more.

Distribute it into 4-5 bowls and leave them to cool.

During this time, preheat the oven to 300°F (150 degrees) and put the tangerine peels in it to dry, while making sure to turn them from time to time.

Put the sugar (80 g) in a blender along with the citrus peels and blend them at maximum speed to get a fine tangerine sugar powder.

When the vanilla puddings have cooled, sprinkle them with it and refrigerate them until it's time to serve them!
