How to make
The rice is rinsed under cold water until the water runs almost clear. It is placed in a small saucepan with the measured water and a pinch of salt. Once it comes to a boil, the heat is reduced, the pan is covered, and the rice is cooked for 12-15 minutes, until tender and fluffy. It is then left covered for another 5 minutes before gently fluffing with a fork.
The tofu is drained well and pressed between kitchen paper or a clean towel for about 10 minutes. This helps it brown better and keeps the pieces firm in the pan. It is cut into thick rectangles or large cubes, then tossed with cornstarch and a small pinch of salt until lightly coated on all sides.
A wide non-stick pan or wok is heated over medium-high heat. The neutral oil is added, followed by the tofu pieces in a single layer. They are fried for 6-8 minutes, turning carefully, until golden on the edges and lightly crisp. The tofu is transferred to a plate while the vegetables are prepared.
The bell peppers are sliced into thin strips. The spring onions are sliced, keeping some of the green tops aside for serving. The garlic and ginger are finely chopped, and the chili is sliced if using.
In the same pan, the peppers are stir-fried for 3-4 minutes, just until glossy and slightly softened but still bright. The garlic, ginger, chili, and the white parts of the spring onions are added and cooked for about 30 seconds, just until fragrant.
For the sauce, the soy sauce, rice vinegar, maple syrup or honey, tomato paste, sesame oil, and 3-4 tablespoons of water are stirred together. The tofu is returned to the pan, the sauce is poured over, and everything is tossed gently for 1-2 minutes. The sauce should turn shiny and lightly coat the tofu and vegetables. If it thickens too much, a splash of water is added.
The homemade tofu stir fry with vegetables and rice is served in bowls over the warm rice. It is finished with sesame seeds and plenty of sliced spring onion greens. Leftovers can be kept in an airtight container in the refrigerator for up to 2 days and reheated gently in a pan with a spoonful of water.
