How to make
The vegetables are prepared first so the black burger stays fresh and crisp. The lettuce leaves are washed, dried very well and kept whole, because they create the bright green layer visible around the bun.
The tomatoes are sliced into even rounds, and the cucumber is cut into thin half-moons or rounds. Excess moisture from the tomato and cucumber is gently blotted with kitchen paper; this helps the black bun keep its shape and prevents the seafood burger from becoming soggy.
The crab filling is mixed in a small bowl. The cooked crab meat is checked for any shell pieces, then combined with cream cheese, mayonnaise, lemon juice, finely chopped dill, a little salt and black pepper. The mixture should be creamy but not runny, almost like a soft spread. If the crab is very moist, it is drained well before mixing. This seafood cream gives the burger its delicate crab flavor while staying neatly hidden under the top bun, just as in the finished burger.
The black burger buns are sliced horizontally if they are not already cut. For the closest result to the photo, they are left soft and glossy rather than heavily toasted. If a warmer burger is preferred, the cut sides can be warmed in a dry pan for 30-40 seconds, only until lightly heated. They should not become hard or browned, because the dark bun is part of the clean visual contrast.
Each burger is assembled on the bottom half of a black bun. A lettuce leaf is placed first, with the ruffled edge slightly showing outside the bread. Smoked salmon slices are folded loosely over the lettuce, creating a visible orange layer. The cucumber slices are arranged over the salmon, followed by tomato slices in an even layer.
The crab cream is spread on the cut side of the top bun in a generous but controlled layer. The top bun is placed over the vegetables and pressed very lightly, just enough for the layers to hold together without flattening the lettuce. The burger should show the black sesame bun, green lettuce, salmon, cucumber and tomato in clear layers.
The veggie black burger with salmon, crab and fresh vegetables is best served immediately, while the vegetables are crisp and the bun is soft. If it needs to be prepared ahead, the crab cream can be made and chilled for up to 1 day, and the vegetables can be sliced a few hours in advance. The final assembly should be done right before serving.
