How to make
The vegetables are prepared first, because a good filling is the secret to crispy fried vegetable spring rolls. The cabbage is finely shredded, the carrots are cut into thin matchsticks, and the spring onions are sliced. If the bean sprouts are very wet, they are patted dry with kitchen paper so the filling does not soften the wrappers.
A wide pan is heated over medium-high heat. A tablespoon of oil is added, followed by the garlic and ginger. They are stirred for about 30 seconds, just until fragrant. The cabbage and carrots go in next and are cooked for 3-4 minutes, until slightly softened but still bright and fresh. The bean sprouts and spring onions are added for another 1 minute. The filling should stay crisp, not turn soggy.
Soy sauce, sesame oil and white pepper are stirred through the vegetables. The pan is removed from the heat and the filling is spread on a plate or tray to cool for 10-15 minutes. This step matters: warm filling creates steam inside the rolls and can make the wrappers split while frying.
The flour and water are mixed into a smooth paste for sealing. One spring roll wrapper is placed on the work surface with a corner pointing toward the cook. A spoonful of cooled vegetable filling is set near the lower corner. The bottom corner is folded over the filling, the sides are folded inward, and the roll is wrapped firmly but not too tight. The top corner is brushed with the flour paste and pressed to seal. The same method is repeated with the remaining wrappers and filling.
The frying oil is heated in a deep pan to 175-180°C / 350-355°F. If there is no thermometer, a small piece of wrapper should sizzle immediately and turn golden in about 20 seconds. The spring rolls are fried in batches for 3-4 minutes, turning once or twice, until evenly golden, crisp and blistered in places. The pan should not be overcrowded, because the oil temperature drops and the rolls absorb more oil.
The cooked spring rolls are lifted onto a rack or paper towels to drain. They are served hot with sweet chili sauce, lime wedges and fresh cilantro or parsley. The lime adds brightness and balances the sweetness of the dip.
Leftover spring rolls can be stored in an airtight container in the refrigerator for up to 2 days. For the best texture, they are reheated in an oven or air fryer at 180°C / 350°F for 6-8 minutes, until crisp again. Microwaving is possible, but it softens the wrappers.
